A NORTHAM butcher who was this week announced runner-up for Australia’s best bone-in leg ham said his recipe for success involved teamwork and jarrah woodchips.
As part of the inaugural Australian Ham Week this week, Australian Pork Limited announced six finalists across bone-in and boneless categories on Sunday in Sydney.
Andrew Quin of Quin’s Butchers won second place in the Traditional Australian Bone-In Leg Ham category and was the only WA smallgoods producer to make the list.
“We sent a sample via an overnight courier in an esky,” he said.
“The comments that came back were good.
“We got a phone call on Sunday night and we’re pretty happy.”
Mr Quin has owned the shop for three years and works alongside another butcher, an apprentice and shop assistant.
He said teamwork, a simple recipe and using WA pork was the key to the perfect ham.
“We just use sugar for sweetness, nice jarrah woodchips and make sure it is cooked perfectly,” he said.
Mr Quin said it was good to be recognised.
